Baked Acorn Squash :: Gluten-Free

I have enjoyed acorn squash in three different homes, all gluten-free, and each one prepared almost the same as the other! Acorn squash is a great side dish or a nice warm snack.

Baked Acorn Squash {Gluten-Free}

1 acorn squash (cut in half)
olive oil
butter
brown sugar

  1. Preheat oven to 400* (Fahrenheit).
  2. Remove the seeds and string from inside the acorn squash.
  3. Cover a baking dish or deep (1/4-plus inch) cookie sheet with aluminum foil.
  4. Drizzle the foil with olive oil.
  5. Lightly coat the cut side of the acorn squash with olive oil.
  6. Place the two halves cut side down on the olive oil covered foil.
  7. Place in oven and bake for 40 minutes, or until a fork enters the outer skin smoothly.
  8. Let cool, then place each half into their own serving bowl.
  9. Top with butter and brown sugar to your liking and mix in with the soft acorn squash.

This simple and easy dish is quickly becoming a new favorite with my gluten-free meals!

  1. Thanks for sharing-looks delish! If I can find it out here, I will definitely make it. One of my other favorites is butternut squash cut in 1-inch chunks, roasted with a little olive oil and sea salt. Like candy :-)
