These hand mashed red potatoes are easy to make AND have a nice kick of garlic.

Skillet Mashed Potatoes {Gluten-Free}

1.5 lbs small red potatoes
2 tbsp olive oil
4 garlic cloves, minced

  1. Rinse potatoes and cut into halves or quarters, depending on size of the potato.
  2. Place potatoes in a 2 inch deep skillet and cover with water. Sprinkle with salt.
  3. Bring to a boil over medium/high heat.
  4. Reduce temperature to medium/low heat until potatoes are cooked through (about 40 minutes).
  5. Strain potatoes and transfer to a bowl. Mash using a handheld potato masher.
  6. Add olive oil and minced garlic to skillet, over medium/low heat. Cook for 2-3 minutes.
  7. Add mashed potatoes to skillet and season with salt and pepper.
  8. Stir potatoes into olive oil and garlic, until desired crispness is reached.
